Homemade pasta sauce with garden fresh tomatoes.

I have been making homemade pasta sauce lately so I thought I would share a recipe and how to make it.

Start with 3 pounds of tomatoes.  These are from our garden.  Roma tomatoes work best.

After you wash off the tomatoes, cut an X in the bottom.  It makes them easier to peel.   While you are making the X's, have a pot of water boiling.

When the water has come to a boil turn it off and put the tomatoes in.  Let them stay in the water for 1 minute.  After that minute, put them in a bowl of ice cold water for about another minute.

Take the tomatoes out of the cold water and place them on paper towels.

The fun part.  You have to peel each tomato.

Then cut the tomatoes in half and squeeze out the seeds as best you can.

Here are the ingredients.  Minced garlic, sugar, salt, pepper, tomato paste, olive oil, basil, and oregano.

After you have peel and seeded all of the tomatoes, put them in a blender or food processor to puree them.

Heat 3 tablespoons of olive oil for 1 minute and then add 3 tablespoons of minced garlic.  Heat this for about 2 minutes.

Add the pureed tomatoes, 2 teaspoons of oregano and basil,  1 teaspoon of sugar, 1 teaspoon of salt, and 1 teaspoon of pepper.  Add the tomato paste and fill the can with water and add that as well.  Let this simmer for at least 20 minutes.  That is it!  Homemade pasta sauce.  This is also great for cheese sticks and bread.

You can freeze the extra sauce.  I like these Ball plastic freezer jars.  I use the small size for this sauce.

I also like the way they stack together.
This takes about an hour from start to finish and that includes clean up time.  Not bad for great sauce!
