Roasted chickpea tacos............

So this was our amazing dinner tonight.  Easy, healthy, and completely eaten up!
First up, roast the chickpeas.
Either canned or soaked overnight and cooked.
Rinse them off, drizzle with olive oil, add salt and
pepper, roast 350 degrees for about 12 minutes.  While those roast,
throw all the taco fixings you like into serving dishes,
put crunchy taco shells, tortillas, or taco salad shells
in the oven with the chickpeas for about the last 5 minutes.  Done!


A squeeze of lime hits the spot!  This funny-shaped thing is a taco boat.
So it is a tortilla shaped like a boat so you can fill it up with your taco ingredients
and pick it up and eat it.  Brilliant!
If you are going shell-less, this makes the best salad ever!
