Easy chickpea burgers..........

We made these amazing chickpea burgers with tahini sauce so I have to share the recipe.
Just combine some tahini, garlic, lemon, salt, and pepper then mix it up.
Refrigerate what ever is left over for about a week.
Grate one carrot.  We buy organic.
In a food processor or blender add one can of chickpeas rinsed and drained.
Add the carrot, 2 tbs of flour (we used almond this time), salt, pepper, a little bit of
olive oil, 2 tsp of ground coriander.  You also need one egg (we used vegan egg
substitute which worked fine for this recipe).
Shape in to patties and fry in olive or canola oil for about
3 to 4 minutes on each side.
We loaded ours up with all kinds of goodies.  Lettuce, tomato, avocado, and lots
of tahini sauce.  We used potato slider buns which are to die for.
We just sliced up a few potatoes and baked them in olive oil, salt, and pepper
to go with this amazing burger.  

These chickpea burgers were seriously delicious!  We all agreed we could eat these at least once a week.  It is also a very cheap meal which is also a bonus.
