I am going to call this the Monster Sandwich.......

A while back, we went to Mellow Mushroom and ordered a Teriyaki Tofu veggie sandwich to die for so we thought we would recreate this, and it was so freaking delicious plus a lot cheaper to make at home.

So grab a few sandwich/hoagie rolls.  We look for enzyme-free, dairy-free,
and anything to do with any animal body parts.  It is not too hard to find.  These were awesome.
Grill up some tofu and season with Teriyaki.
Wash, cut, and rinse off mushrooms, onions, and green peppers.
A16 is not a fan of tomatoes but I love them so I just tossed a few cherry tomatoes
in with some olive oil and Teriyaki sauce-low sodium.
Toss all the goodies into a hot pan of olive oil, Teriyaki sauce, salt, and pepper.
The Teriyaki sauce and veggies have a lot of flavor
and the tofu holds any flavor you add to it so you do not need
to over-salt or over-season any of it.
Vegan cheese.  This Follow Your Heart brand is fantastic!
Then just pile up whatever you like on the bun.
We did not need a side but these organic corn chips were a great compliment.
That is it.  Just eat and enjoy.  These are so filling, we could not finish ours.
