A while back, we went to Mellow Mushroom and ordered a Teriyaki Tofu veggie sandwich to die for so we thought we would recreate this, and it was so freaking delicious plus a lot cheaper to make at home.

So grab a few sandwich/hoagie rolls. We look for enzyme-free, dairy-free,
and anything to do with any animal body parts. It is not too hard to find. These were awesome. |

Grill up some tofu and season with Teriyaki. |

Wash, cut, and rinse off mushrooms, onions, and green peppers. |

A16 is not a fan of tomatoes but I love them so I just tossed a few cherry tomatoes
in with some olive oil and Teriyaki sauce-low sodium. |

Toss all the goodies into a hot pan of olive oil, Teriyaki sauce, salt, and pepper.
The Teriyaki sauce and veggies have a lot of flavor
and the tofu holds any flavor you add to it so you do not need
to over-salt or over-season any of it. |

Then just pile up whatever you like on the bun. |

We did not need a side but these organic corn chips were a great compliment.
That is it. Just eat and enjoy. These are so filling, we could not finish ours. |
