Why do people become vegetarian (lacto-ovo no meat but dairy and eggs), lacto-vegetarian (dairy), ovo-vegetarian (eggs), flexitarian (mostly vegetarian with meat occasionally) vegan (no animal products at all), pescatarian (only fish), raw vegan, or macrobiotic? There are a lot of different options here to choose from as you can see.
I have been a vegetarian (not usually eggs, little to no dairy, I just think it is gross) for almost 17 years. My girls stopped eating meat several years ago but not at my request, they just love animals so much and they finally just put 2 and 2 together and decided they did not want to eat any more meat.
We live in the country so it is not unusual to see multiple truck loads of chickens going by every day on their way to the local slaughter house. Even now when a chicken truck passes us by, both my kids say they hope the chickens somehow escape. Not to mention the fact that the trucks full of chickens is not a pretty sight to see. All those chickens crammed in to those boxes, beaks hanging out, feet hanging out, occasionally one will fall out, just looking at that makes me wonder why anyone would want to eat that but I do not have an issue with anyone eating anything they want, just saying what I think. We also have a lot of pastures filled with cows that are numbered. There is a local cow auction every Tuesday night not too far from us.
I am also very wary of added steroids, hormones, and antibiotics to animals while they are alive.
I think for the most part, all kids go through various different eating patterns and when you fight them on it, things only get worse. Any of the above listed diets are very healthy diets to follow since cholesterol is only found in the animal world-i.e. there is no cholesterol in a plant-based diet which equals good news from the doctor's office. Our pediatrician is in full agreement with our diet as they can see first hand every year that both the girls are healthy.
There are too many resources that I used to link but I will list a few of my favorites.

Peas and thank you.
You should eat as if your life depends on it as it actually may be true.
